Bean Salad with Tuna

Ingredients
onions, red
- 1/4 medium
green Beans, cooked, no salt
- 2/3 cup
Cilantro
- 2 sprigs
olive oil, extra-virgin
- 1 tbsp
tuna, canned in water
- 1/2 cup, solid or chunks
Carrots, baby
- 8 large
Tomatoes, cherry
- 1/2 cup
Kidney Beans, canned
- 1/4 cup
chickpeas (garbanzo beans), plain, canned
- 1/8 cup
salt
- 1 dash
pepper, black
- 1 dash
Directions
1. Rinse and drain a can of red kidney beans and a can of chickpeas - measure out appropriate amounts.
2. Finely chop onions and cilantro.
3. Cook sliced green beans in lightly salted boiling water for 3 minutes, then drain and refresh under running cold water.
4. Mix together all ingredients with olive oil, salt and pepper and serve in bowl.
5. Top with a can of tuna in water, baby carrots and cherry tomatoes.
