Chipotle Chili

Ingredients
olive oil, extra-virgin
- 1 tbsp
garlic cloves, minced
- 2 Item(s)
ground, cumin
- 2 Teaspoon(s)
chili powder, ground
- 4 tsp
chipotle, canned, minced, in adobo sauce
- 1 Tablespoon(s)
beef, ground, 90% lean
- 1 lbs
tomatoes, canned, crushed
- 1 oz
onions
- 1 cup, chopped
kidney beans, canned
- 20 oz
Directions
1. Heat oil in a Dutch oven over medium-high heat.
2. Add the onion and garlic; cook 4 minutes, stirring occasionally, until onion is softened.
3. Add the cumin, chili powder, chipotle and beef (if using); cook 5 minutes, stirring to break up the meat, until browned.
4. Add diced and crushed tomatoes and kidney beans; cook until thick, 12 to 15 minutes.

I used bison instead of beef, since it is grass-fed, not corn-fed like much of the beef. The chili was very good and very filling.

I like it. I don't think so much chili pepper is necessary, but that's just me. I don't understand how to measure out 1 oz of canned tomatoes. Maybe that's a typo.
